If you have seen a photograph of lion’s mane, you probably stared at it for a second. It does not look like a mushroom. It looks like a shaggy snowball hanging off a trunk, or a very old man’s beard. Almost every name it has comes from that.
Its scientific name is Hericium erinaceus. Erinaceus is Latin for hedgehog, which makes complete sense once you see one up close.
A note for the curious: in 2025 a molecular phylogeny paper split what we thought was one species. H. erinaceus in the strict sense is now restricted to western Europe, and the Asian material — which is where much of what gets farmed comes from — became H. asiaticum. When we say lion’s mane we mean the name in its broad sense, which is how it is used everywhere.
Why it has spines and not gills

Almost every mushroom you know — the button, the oyster — drops its spores from gills under a cap. Lion’s mane has no cap and no gills. It has hanging spines, which can reach several centimetres, and that is where the spores are released.
That design puts it in a group of its own: the tooth fungi. It is not a decorative oddity; it is a different way of solving the same old problem, which is getting spores into the air.
Where it grows
It is a temperate-forest mushroom. It grows on hardwood — oak and beech above all — and here is a detail almost everybody gets wrong: it is not a simple decomposer of dead wood. It gets in through wounds on living trees, produces a white rot inside the trunk, and in fact fruits more often on living trees than on dead ones. A Slovak study that tracked its appearances over years documented exactly that.

That same work records something remarkable: on one tree it can come back five to ten years running.
It is not easy to find in the wild, and in several countries it is protected by law. In the United Kingdom it is one of only four fungi listed in Schedule 8 of the Wildlife and Countryside Act — added in 1998 — and it is also protected in Croatia, Hungary, Poland, Serbia, Slovenia and Sweden. Even so, globally the IUCN lists it as least concern: it is scarce in Europe, not in the world. Practically everything eaten today comes from controlled cultivation.
How it is farmed
It is grown on wood substrates: blocks of oak or beech sawdust supplemented with bran, sterilised and then inoculated with the mushroom’s mycelium.
The process has two very different stages:
- Colonisation. The mycelium — the network of white filaments that is the real body of the fungus — eats the substrate from the inside. It takes weeks and it happens in the dark.
- Fruiting. Once the block is colonised, the conditions change: more humidity, more oxygen, a temperature shock. That is when the fungus forms the fruiting body, the shaggy white part you see in photographs. That is the mushroom proper.
That distinction between mycelium and fruiting body is not a grower’s footnote: it is what separates a good product from a bad one, and we explain it separately in fruiting body or mycelium.
The names it has around the world
In Japan it is yamabushitake, after the yamabushi, the mountain ascetics. In China it is hóu tóu gū, monkey head mushroom. In English, lion’s mane.
An honest warning: there are some very pretty explanations going around for where each name comes from — the pompoms on a yamabushi’s robe, the monkey’s head — but they are not documented. The names are; the stories behind them are not. We would rather say so.
What it tastes like
This is the part almost nobody covers. Lion’s mane does not taste like soup mushroom. The one instrumented sensory study that exists put a panel to work evaluating it against eight different meats, and it came out rated more fibrous, juicier, fattier and more meaty than all of them. The comparison with crab or lobster that gets repeated everywhere has only loose support in the literature; the fibrous-texture one is far better measured. The flavour is mild, slightly sweet, not earthy at all.
Dried and powdered, which is how it reaches most products, the profile shifts: it turns toasted, almost nutty.
What is in it
Like every mushroom, it is mostly water. According to the USDA food composition database, 100 g of fresh lion’s mane contains 88.6 g of water, 2.5 g of protein, 4.4 g of fibre and barely 0.26 g of fat.
In the cell wall of mushrooms there are polysaccharides called beta-glucans. They are the component measured when someone wants to know how concentrated an extract is, which is why good producers declare it. It is a composition figure, the same way a chocolate declares its cocoa percentage.
How it is used today
Three ways, basically. Fresh, in the kitchen, sauteed like any mushroom. Dried whole, to rehydrate. And as a powder or extract, which is how it gets into drinks and prepared foods.
