Six ways to take Seta Panela, starting with coffee

A serving of Seta Panela is powdered panela with mushrooms. It behaves like panela: it dissolves in hot liquid, it sweetens, it adds colour. The only thing that changes is the bottom of the flavour, which turns a little toasted.

Which means you do not have to invent a new routine. It goes wherever you would already have put sugar.

The basics, before the six ways

  • A serving is 8 g — a level scoop. That is one normal cup, about 8 oz. The pouch holds about 56.
  • Warm or hot liquid, not boiling. Around 160–175 °F it dissolves evenly. At a rolling boil it clumps, the same way cocoa powder does.
  • Stir while you pour, not after. Same motion as always.
  • You can sweeten it further. The serving brings its own sweetness, but if you like it sweeter, add sugar on top without a second thought.

1. In coffee

The most direct, and the one that works best. Pour the coffee, let it come off the boil for a moment, add a serving and stir.

Maitake is toasted and coffee is toasted: they meet immediately. Lion’s mane softens the bitter edge. If you drink your coffee black and unsweetened it will taste sweet at first; half a serving lands closer to what you are used to.

2. In hot water with lemon

The Colombian version of this is agua de panela, and it is almost a happy redundancy: you are putting panela into panela.

A serving into 8 oz of hot water, a squeeze of lemon at the end and a cinnamon stick if you have one. The lemon lifts the whole thing and takes the flatness out of it. Hot in the morning, over ice at midday.

3. In oatmeal or porridge

Here the serving does not dissolve into a liquid: it works into a mass. Cook the oats with milk or water, take them off the heat, and stir the serving in at the end.

It comes out thick, toasted and the colour of panela. It is one of the ways where the texture of the mushroom is most noticeable, and plenty of people like it for exactly that. With banana on top it works very well.

4. In hot chocolate

Dissolve the serving along with the chocolate, whisking as usual.

Cacao and maitake share that bitter, earthy bottom note, so they reinforce each other instead of fighting. It is probably the preparation where the mushroom goes most unnoticed — useful if you are introducing it to somebody suspicious at home.

5. Cold, in a smoothie or in milk

Panela takes longer to dissolve cold, so there is a trick: dissolve the serving in two or three tablespoons of hot water first, make a paste, and put that paste into the smoothie or the cold milk.

In a blender with banana, milk and ice it comes out like a thick malted drink. With plant-based milk — almond, oat — it also works; coconut is the one that suits it best.

6. In cooking, not only in drinks

It is panela. It does what panela does.

  • In marinades and sauces, wherever you would already use brown sugar to balance acidity: a homemade barbecue sauce, pork, ribs. The toasted bottom note adds to it.
  • In baking, replacing part of the sugar in a banana bread, oatmeal cookies or a flan. Bear in mind that it brings moisture and dark colour, so the batter looks browner.
  • Over hot fruit, dusted over roasted plantain or a baked apple.

Three common mistakes

  • Boiling water. Lumps guaranteed. Let it come off the boil for thirty seconds.
  • Adding it and not stirring. Powdered panela sinks and compacts at the bottom. Stir while it falls.
  • Expecting it to taste like a button mushroom. It does not. It tastes of panela with a toasted bottom, closer to a nut than to mushroom soup. If you expect the other thing you are in for a surprise — a good one, nearly always.

How many a day

One serving a day is how most people use it, usually in the morning. It is a food, so the measure is yours, the same way you decide how much sugar goes in your coffee.
